Mimi Mary Baker (47 Years Young)
Entered into heaven early Sunday morning Sept. 18th.
Mimi (Mary Margaret Hoffman, daughter of William and Mary) grew up in Takoma Park, MD, attending church and school at Our Lady of Sorrows Parish where she received her Sacraments. She spent her childhood in Takoma Park and visited Rehoboth Beach, DE, often. She attended high school at the Academy of Holy Names in Silver Spring. She graduated from the University of MD at College Park in 1986 with a Bachelor of Science in Accounting, Cum Laude. Mimi resided in Farmington, MN.
Mimi was a former Supervising Senior Auditor for KPMG Peat Marwick and later held numerous professional positions with Walt Disney World in Orlando, FL. Most recently Mimi was Finance Manager for All Saints Catholic Church in Lakeville, MN, helping to manage the finances for both the Worship Services and School. She loved the challenge and the work at All Saints. Above all, she immensely enjoyed the people she worked with, the fellowship of the family there, the opportunity to make such good friends, and be close to her children while they attended school.
Mimi was a Walt Disney World Marathon finisher in January 1995. She was a Certified Scuba Diver and had extensive travel experience. Every time she traveled to a country with a different primary language, other than English, she made sure to learn the appropriate greetings, salutations and language etiquettes which made her trips highly enjoyable as those she met appreciative of her courtesy and smile. Some of her favorite destinations included Kenya and Egypt in Africa.
As a relaxing past time Mimi enjoyed reading mystery and adventure novels. She created numerous scrapbooks for her family and friends to enjoy. During her travels she wrote journals of her adventures. She was a healthy woman who enjoyed hiking and eating good foods including salads, raspberries, blueberries, mushrooms, nuts and light meats. She drank and enjoyed the purity of water with a passion.
Mimi was the inspiring wife of Robert Baker and the loving mother of Samson, 12, and Nina, 10. She is preceded in death by William Hoffman (her father) and John and Eleanor Meyer (her grandparents). Mimi is survived by her loving mother, Mary Hoffman, and six brothers?Bill, John, Mark, Eric, Kurt, and Carl. She will forever hold a joyful place in our hearts.
Visitation will be held on Sunday, September 25th from 1:30 PM until 4:30 PM at Henry Anderson Funeral Home , 14850 Garrett Avenue, Apple Valley, MN 55124.
