Shirley Marie Eppel, 70, of Apple Valley, passed away Tuesday, May 19. She was born March 23, 1945 in Faribault, Minnesota to William James and LaVerne (nee Kerswell) Burke. Shirley is survived by her daughter Lisa; son James; granddaughter Summer; brother William (Yanela) Burke; niece Katherine Burke; and nephews William G. (Monica) and Tyler Burke. She loved to crochet, was a lover of all animals, and was a dedicated caregiver to her late husband, Patrick. Shirley will be forever loved and treasured. Visitation is scheduled for 4-7 PM Friday, May 22, at the Henry W. Anderson Mortuary, 14850 Garrett Avenue, Apple Valley, and 1 hour prior to an 11 AM Funeral Service Saturday, May 23, at the Mortuary. Interment will follow in Lebanon Cemetery.
